When most people think of riesling they think of cloyingly sweet wine that is best enjoyed in the sun, but riesling is a superbly versatile grape capable of ranging from bone-dry to lusciously sweet with the body and intensity to stand up to the dry air and chilly temperatures of winter.  Schloss Johannisberg is a premier producer of the varietal and has been doing it for 900 years.  We will be featuring 4 selections next Wednesday.  Riesling is also perfectly suited for pairing with pork…

Crispy Pig Ear Salad 

pairing:

Riesling Gelblack Qualitätswein

Brisk attack of fine, pure intense mineral notes, yellow- and citrus fruit, with a touch exotic fruits. Light, fruited and pleasing on the palate with restrained sweetness and clean, bright acidity.

Red Flannel Hash

pairing:

Riesling Rotlack Kabinett

Fresh pure Riesling with fruity Bouquet, driven by Lime, white Peach and Quince Aroma. Lively crisp vibrant acidity, very lean and skinny. 

Choucroute Garni

pairing:

Riesling Silberlack Erstes Gewächs dry    

Hand harvest, whole cluster pressure, fermentation in 1200L wooden barrels, rest on lees for 6 mounts. Pale light yellow, brilliant. Slightly reserved on attack with delicate fruitiness, gentle peach stone, citrus, Passion fruit, herbs and physalis. Very mineral and wonderful pure on palate, with long lingering flavors and soft acidity. Well balanced and integrated.

Grünlack Spätlese    

Fermentation in 100% stainless tank, rest on lees for 6 mounts.  Medium intense yellow, brilliant. Intense Bouquet showing lot of young fruit – peach, pineapple, passion fruit, citrus and minerals. The palate shows concentration of freshness and nice structure with lovely lemon acidity and long aftertaste.
